Tofu Nuggets

Ingredients

1 package ‘Extra Firm” Tofu
1 Egg
Milk (or Milk Substitute) Extra Creamy Oat Milk works best 
Corn Meal (Extra Fine Ground)
Flour (Gluten Free or Regular to preference)
Refined Coconut Oil 

Drain water from Tofu Package and place between two paper towels. Pat tofu gently removing any excess water.
(Egg Mixture) Mix egg and a splash of milk into a small bowl. 
Cube tofu into 1” sized pieces. 
Put tofu into egg mixture. 
(Breading Mixture) In a separate bowl combine 1 part cornmeal and 1 part flour.
Dip tofu individually into egg mixture then after into breading mixture. 
Finally, put a small amount of liquid coconut oil into a bowl. 
Roll breaded tofu evenly in coconut oil making sure all sides are coated. 

AIR FRYER

Place tofu on tray/basket and cook at 400°F for 10-12 minutes or until golden brown. 

OVEN

Preheat oven to 400°F. Cover a cookie sheet with parchment paper. Place breaded oiled tofu pieces evenly on the tray and bake for 12-15 minutes or until a deep golden brown. 

*Note: Recipe made as shown is done in a tray air fryer using gluten free flour and extra creamy oat milk. 
It’s important to use extra firm tofu as softer varieties will generally flake apart.
