Pumpkin Bars

Ingredients

1 Egg
Extra Creamy Oat Milk
Pumpkin Puree (Organic Canned or Fresh)
Gluten- Free Flour of Choice
Organic Stone Ground Oats (Thick or Regular Cut)
Cinnamon

In a large bowl mix egg and a healthy dash of cinnamon. 
Add 4-5 large spoonfulls of pumpkin puree.
Add 2 parts oats to 1 part flour. Roughly two large handfuls of oats. 
Slowly add milk until a thick dough begins to form. 


Preheat oven to 380°F. Line a cookie sheet with parchment paper. Spread mixture over cookie sheet in a large rectangle shape. Should be about ½” thick. 

Bake for 15-20 minutes or until golden brown underneath. Let cool and slice into bars. 

*Note: If you’d like the recipe to be completely dairy free you can substitute egg with an egg substitute or applesauce.
